Recipes | Crumbled Sausage + Potato Soup

Ingredients

2 TBSP Salted Butter *Kerry Gold
1 Sprig Fresh Rosemary *Garden Fresh
1 Small Yellow Onion
1.5 TBSP Minced Garlic
1/4 LB Mild Sausage *house made at Whole Foods
1 Cup Dry Red *cotes du rhone
8 Small unpeeled/washed ell Golden Potatoes
S+P to taste
1/2 TBSP Fennel Seasoning
1/2 TBSP Thyme Seanoning
4 Cups Beef Stock *Organic
1/2 Cup Water
1.5 Cups 1/2 & 1/2
1 Ear Fresh Corn
1 Cup Kale *black or lacinto / Garden Fresh
Loaf of French Bread *Whole Foods Bakery

Instructions

In a cast iron pot add butter, once melted add onion and sprig of fresh rosemary.
Once onions have softened add garlic and let cook for 1 minute
Add Sausage and crumble as it cooks with a wooden spatula
Once meat has browned add red wine
Once wine has cooked reduced by 1/2 (happens in about 2 minutes)
Add golden potatoes
Add Salt generously + Fennel, Thyme and Pepper
Stir often over 8 minutes, let potato edges crust
Add four cups of Beef Stock + Water
Let cook on a low boil until potato soften, about 15-20 minutes.

Reduce heat away from boiling
Add fresh corn kernels
Add fresh, torn kale
Add Half & Half
Let simmer for 5-10 more minutes

Serve with Country French Bread + Buttah….
